What is GI vs GL?
GI (Glycemic Index) measures speed of glucose rise per food. GL (Glycemic Load) = GI × carb amount. Watermelon high GI but low GL (low carbs). Bread = both high.
Why does protein matter?
Protein + fat slow gastric emptying. 30g protein with carbs = 30-50% lower glucose spike. Fiber: same effect. Same carbs, different food = different spike.
Should non-diabetics care?
