Egg substitutes — which works best?
For binding (cookies): flax egg (1 tbsp flax + 3 tbsp water). For leavening (cakes): aquafaba 3 tbsp = 1 egg, plus 1/2 tsp baking powder. For richness: yogurt 1/4 cup + 1/2 tsp baking powder.
Buttermilk replacement?
1 cup milk + 1 tbsp lemon juice or white vinegar — let sit 5 min until curdled. Works in pancakes, biscuits, cake. Sour cream + milk also works (1/2 cup each).
Why does cooking type matter?
